Serving
1 3 ½ oz
can salmon, skin and bones removed
1/4 cup
mayonnaise
½ tsp
Dijon-style mustard
3 soda
crackers, crushed into fine crumbs
1 scallion,
minced
1 tsp lemon
juice
1 tsp fresh
chopped parsley
salt and freshly
ground pepper to taste
breads
crumbs
3 tbsp
vegetable oil
1. Mix all
ingredients except the bread crumbs and oil.
2. From the
mixture make 2 equal sized patties.
3. Coat
evenly with bread crumbs.
4. Pour oil in skillet and fry patties until golden
brown.
